Macarel (Bangada) Murmoro

This is a typical Mangalore a dish not very much in use now as it is cooked over coal. However, this could be baked in the oven as well.

Ingredients:
4 big Bangadas (Macarel fish)
½ tsp jeera
10 red chilies
3 green chilies
10 flakes of garlic
¼ tspn turmeric
A small ball of tamarind (as per taste)
1 medium sized onion
1 tspn dried raisins (kismis)
1 inch piece of cinnamon

(Grind all the above ingredients to a fine paste and keep aside)

A few plantain leaves

Finely slice a medium sized onion and fry in 3 tbspn of oil till golden brown. Now add the ground masala and fry for about 5 minutes on slow fire.
Let the masala cool.
Add the masala on the bangadas and wrap them in the plantain leaf and tie with a string.
Pre heat the oven. Place them in a baking tray and put in the oven at 100 degrees for about 5 minutes. Turn the fish and bake for another 5 minutes.
In the good old days the fish was place in the plantain leaf and cooked over coal.
